Wow! This is the best curried sausages I've had so far! Way better than the packet stuff! The kids loved it and there was well and truly enough to go round which is great for big families.
I used half of a bulk pack of sausages so probably about 800g or so. I got the cheapie brand of corn relish which was fine and I did put a can of evaporated milk in so added another pkt of soup and another tbls of curry to make up for it.
I served it on some rice but would have been better on a bed of mashed potato but I couldnt be bothered.
All in all an awesome dish and will definately add this to our regular menu :)
- 1kg thin sausages
- 1 X 400g jar of corn relish
- 1 X 50g packet chicken noodle soup
- 2 cups water
- 1 tablespoon curry powder
- 1 large carrot grated
- 1 medium zucchini grated
- 1 small red capsicum finely diced
- 1 medium onion finely diced
- 1 clove garlic finely crushed
- 2 tablespoons tomato sauce
- 2 tablespoons olive oil
Grill sausages until brown and cut up into 1cm pieces. While sausges are cooking mix the corn relish with packet soup mix, water, curry powder and tomato sauce in a bowl and set aside.
Heat oil in a large pan. Fry onion, garlic and vegetables for 2 mins or until soft. Add sausage pieces and stir through. Add relish mixture to pan and stir through. Simmer for 10-15 mins until the sauce thickens.
This can be served with rice or mashed potato.
Vegetables can be swapped for whatever you have in your fridge.
You can also add a can of evaporated milk to make it a bit more creamier.
