Sorry Folks

I've been a bit slack in documenting my recipes but I have still be cooking them...just not documenting it.  But I promise I'll keep up from now on.  I'll go through them all and hopefully I'll remember what the family thought of them so I can write them up.

Weetbix Choc Balls



Made these for Christmas 2012.  Age old recipe that mum use to make.  Certainly brought back memories.  I actually forgot the recipe so that's the basic recipe but it can be varied, like if it's too wet...add another weetbix or some more coconut etc.  Yum!

Ingredients -

10 Weetbix
2 tbls of cocoa
1 cup coconut
1 can of condensed milk

Mix it all together and shape into balls and roll into coconut.  Refridgerate until firm.

Shortbread



Made this for Christmas 2012.  Yum!  Best shortbread ever!  Even my sister, who doesn't like shortbread, couldn't resist this.  It melted in your mouth...so good!  I didn't bother drawing the circles I just pressed the dough out into a circle...gave it a more rustic look.  Made heaps.

Ingredients -

250g butter, softened
1 cup icing sugar
1 teaspoon vanilla extract
2 cups White Wings Plain Flour
1/2 cup cornflour

Basic topping

1 eggwhite, lightly beaten
2 tablespoons white sugar

White Christmas



Made this for Christmas 2012.  This is the best White Christmas I've ever had.  I adjusted a recipe and added marshmallows and extra vanilla and it was a hit!  Everyone loved it and it made a fair bit too which is always good. 


Ingredients -

3 cups of Rice Bubbles
1/2  - 3/4 cup of glaced Cherries doesn't matter which colour...the same or different.
1 cup of mini marshmallows
1 cup of coconut
225g Copha
2 tsp of Vanilla

Method

1.  Mix dry ingredients.  Add melted copha and vanilla and mix well.
2.  Press into tin.  Refridgerate until firm.

Tim Tam Balls



Made these for Christmas 2012.  These were a great hit!  Everyone loved them.

These had to be adjusted as I found that the amounts made it too wet and sticky and you could tell that they would not have stayed together.  Orignally I was going to make 1 lot of normal tim tams and another lot of mint tim tams but had to put the 2 packets together and only put 1/2 a can of condensed milk in as opposed to 3/4 of a can.  So yes this needs to be played around with a bit but it's so worth it though...yummo!

Ingredients -

1x 100g pkt of Tim Tam Chocolate biscuits
3/4 of 395 can of Condensed Milk
Coconut or Chocolate Sprinkles

1.  Crush Tim Tams in Blender and fold in condensed milk
2.  Roll mixture into balls and then roll in coconut or sprinkles
3.  Refridgeraate until firm.

Sweet Rissoles

I'm sorry to subject you all to this...but I have to share the good with the bad.  And this was baaaaad!  I think it was the corned beef that turned me off this, it was like dog food.  Even as I was putting it together I was literally gagging.  But being the eternal optimist I thought that once it was all cooked up it'd be great!  But nope!  For me, I think it was more the thought of the corned beef being like dogfood that turned me off.  I simply couldn't eat it.  I did taste it...but I didn't have it in my mouth long enough for me to see if it actually tasted any good...I had to spit it out, it was just making me gag!

Sad thing is that Aaron really loved it...he was squishing it into sandwiches even...blurgh!  Then he says "We're not having this ever again are we." with a sad look on his face...."Nope honey we're not!"  But as I said to him...there are hundreds of other recipes to try so one less isn't really going to limit our recipe book.

The kids were too busy eating the vegies...(the younger ones as the older ones were at their dad's).  I can't even remember if they tried it...who cares?  I'm never making it again! LOL


340g tin of corned beef
1/2 cup crushed pineapple drained
1 cup mashed sweet potato
1 egg

Plase allingredients into a bowl and mix throughly.  rool into decent sized patties and place onto a paper lined baking tray.  Bake in mod oven for 30-40 until nicely browned.

Open Cheeseburgers

Wow this was really fun to make actually...and the kids really loved eating it.  It's great for a quickie meal as it doesnt' take much preparation.  Great with Salad.  The only issue we had was that the bottom of the bread went a bit hard so it was hard to eat...but the kids were quite happy to hack at it, I ended up just slicing the hard crust off sideways...then I had no problems at all. 

  • 500g lean beef mince
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup (85g) tomato sauce
  • 1/4 cup (45g) chopped onion
  • 3 tablespoons (60ml) Worcestershire sauce
  • 3/4 cup (30g) crushed cornflakes
  • 1/2 cup (125ml) evaporated milk
  • 1 (450g) loaf unsliced Italian bread, cut in half lengthwise
  • 6 cheese slices
