Pinapple and Coconut Cake

I had Jade make this last night and it was great! The only issue we had was that I forgot to tell her to have the oven on 160 because it's fanforced so it was a little dry around the edges. We only had pineapple pieces instead of crushed but it was still ok.
It was such a yummy cake, especially with some cream on it....it was pretty filling too, you really only need 1 piece, which is good for the waist line.
I've always been a fan of pineapple cakes ever since I was a young teen and we made a pineapple cake (in the shape of a pineapple) for a youthgroup cake competition. A fellow named 'Paul Toppo' was in the group so we called the cake 'Gone Troppo'...we won! So yeh I've always loved it, and with the coconut it was especially nice.
1 1/2 cups S/R Flour
1 cup Coconut
1 x 395g crushed Pineapple
1/2 cup milk
Mix ingredients together and pour into a greased tin
Bake in an 180C oven for about 30-35 until cooked
Dust with icing sugar or serve still warm with whipped cream
