Almond Chicken
*Tried and tested*
It's a hit! I had over cooked the almonds I thought but when we went to eat it, it gave it a nice smoky taste and everyone loved the smoky taste! I wouldn't change a thing!
Ingredients -
2 chicken breast fillets - cubed
2tbls peanut oil
3/4 cup blanched almonds
2tbls chopped ginger - I used the jarred stuff
3 celery stalks - chopped
1tsp salt
2tsp sugar
100g mushrooms
1 red capsicum
1 onion all chopped
1 1/2 cups chicken stock
2tbls corn flour
2 tbles soy sauce
Method -
Place oil in pan and when hot fry almonds until pale brown
Drain on paper
Add more oil if necessary and fry onions lightly, add chicken, mushrooms and ginger, celer and capsicum, chicken stock salt,sugar and sauce. Heat through
Blend cornflour with a little water and thicken mixture
cook for 3 mins
Add almonds just before serving and serve with rice
