Sweet and Sour chicken

Awesome!  It's a hit!  Everyone loved it!  Tasted just like the chinese shop.  I pretty much stuck to the recipe just guesstimated the measurments.  Great with the cashews! 

Dana was heading off to work that day and didn't want to miss out so I put some in a chinese food container just like the real thing.



Ingredients -
2 chicken breast fillets - cubed
1/2 cup vinegar
4 tbls sugar
1tbls soy sauce
2 cups water
3tbls cornflour
salt and pepper
onions and/or shallots
2 tbls chutney
1 red capsicum
1pkt cashew nuts

Method -
 
Cook chicken until brown, add capsicum and cook for about 5 mins then add shallots/onions. and cook for  further 5 mins.
Combine vinegar, sugar, sauce, water and cornflour, salt and pepper in a Jug then pour over chicken mixture, stir until thickened.
Add chutney and allow to cook for 2-3 mins
Add cashews and heat through.
 
Serve with rice.
