Curried Tuna Slice

The kids liked it.  Needed some onion and garlic?  The rice in the soup didn't cook properly, maybe try microwaving the mixture for about 5 mins before hand to give the rice a chance to cook.  Add a little curry?  Can't see the point of the pastry either.



Curried Tuna Slice
  • 2 sheets shortcrust pastry
  • 1/2 medium zucchini - grated
  • 1 x 425 can tuna
  • 4 eggs
  • 1 tin evaporated milk
  • 1 packet of Dutch curry and rice soup mix
  • Salt and Pepper to taste
Line a lamington tin with baking paper and give a quick spray with Canola Oil.  Line the tin with the pastry, slightly overlapping on the bottom and press well to seal. Preheat the oven to 190 degrees.  Scatter the grated zucchini on the bottom of the pastry.  Drain the tuna and scatter the tuna evenly over the top.  In a small bowl, beat together the eggs, milk, soup mix and salt and pepper.  Pour into slice and bake for about 3o minutes.  Serve hot or cold cut into slices.
