Pasta with Creamy Ham Sauce

Yum!  Very nice.  I chopped up a small onion and some capsicum and chucked that in too.  I found that it didn't make a great deal for a large family so it would probably make a good side dish for us...maybe with some steak or sausages :)

 

Pasta with Creamy Ham Sauce

Ingredients -
350g pasta
2 slices ham finely chopped
2 cups vegetable stock
2tsps crushed garlic
4 spring onions finely sliced
75g light cream cheese
2tbls cornflour blended with 1/4 cup water
1/4 cup herbs
12 cherry tomatoes quatered.

Method -
1.  Boil pasta
2. Saute the ham, add the stock, garlic and shallots.  Bring to boil then add cream cheese and stir until smooth.  Stir in the cornflour mixture and simmer for 1-2 mins or until thickened
3.  Add the pasta, herbs and tomatoes season with salt and pepper to taste.
