Peppermint Cheesecake

Yum!!!  Had this at my son's birthday/our engagement BBQ and it was a hit!  Pretty much stuck to the recipe, I think I added more butter for the base - that's about it.  Can't wait to try other chocolate bars with this :)


Ingredients:

1pkt Scalliwag biscuits - crushed
200g butter
3tsps gelatin
1/4 water - boiled
2 x 250g cream cheese - softened
1/2 cup caster sugar
300ml thickened cream - whipped
8 x Peppermint Crisps - chopped roughly

Method:

Add melted butter to crushed biscuits and stire to combine.  Press mixture into a greased pie plate. Refridgerate

Sprinkle gelatin over water, stire until dissolved, leave to cool

Beat cream cheese and sugar until smooth

Stir in gelatin and fold in whipped cream and chocolate

Pour over base, cover and refridgerate

Alternatives - Caramel chocolate, Cherry Ripe, Mars Bar etc
