Chicken Curry

OMG yes!!!  Yum yum yum!  It's another hit as I knew it would as I used to make something similar years ago but lost the recipe, I also remember putting Mango Gel baby food in it instead of chutney (don't ask) but I love the chutney.  I put half a can of coconut cream in it instead of normal cream just for something different but it would taste just as good with normal cream too!  Very nice...even the littlies ate it! (I only put the tinsiest tiniest smidge of cayenne in it after my mishap with the Gerard Steak - see I do learn ;) )

 

Chicken Curry

Ingredients -
2 chicken breast fillets cubed
1 onion - diced
1 clove garlic
2tbls butter or marg
2tbls flour
1-2tbls curry powder (depending on taste)
1/4tsp ginger
1/4tsp turmeric
pinch cayenne
1tsp salt
1 tsp sugar
1 tbls chutney (I use 2 jars of mago gel - babyfood)
1 - 1 1/2 cups chicken stock
Method -
Cook chicken in pan - remove
Melt butter or marg and sautee onion and garlic
Add flour, curry, ginger, turmeric cayenne and salt - cook on low for 2 mins
Add sugar, chutney and stock and stir until sauce thickens
Add chicken and simmer for 10 mins
Stir in lemon and cream serve on rice
