Macaroons
*Tried and Tested*
An oldie but a goodie! I have this great recipe book for Home Ec in grade 10 that I have thumbed through that many times! I found this recipe all those years ago and I've been making these ever since. They were originally called "Macaroon Fingers" and you had to pipe fingers onto the tray, but I never could be stuffed doing that so I'd just blob it on instead. Usually I'd dip them in chocolate but I couldn't be bothered yesterday so I just left them as is. They are still yum...but just yummier with chocolate ;)
Anyway this is a tried and true recipe for way back...and pretty much fail proof...I've never stuffed it up and usually if anyone would stuff it up it would be me so yeh I'd say fail proof! :)
2 egg whites
1/2 tsp vanilla
1/2 cup icing sugar
1/4 cup plain flour
1 cup coconut
60g chocolate (or more if needed)
Beat egg whites until stiff
Add vanilla
Gradually beat in sifted icing sugar, beat until stiff and glossy
Fold in flour and coconut.
Blob teaspoon fulls of the mixture onto greased trays
Bake in slow to moderate oven for 15-20mins or until barely coloured
Stand for a minute then loosen with a knife
Allow to cool.
Melt chocolate and dip each macaroon until they are half covered and let them set on some grease proof paper.
