I was a bit sceptical about this dish, I don't know why because it turned out scrummy! Again, the littlies ate it. I put a tad more curry powder than they said and it made it extra yummy. We had it with chips that night as we had an extra person around we weren't planning on who stayed for tea so we grabbed $5 worth of chips just to bulk it up a bit...turned out that it didn't need all that much bulking. It was great!
Ingredients -
1 tbl butter
1tbls oil
2 chicken breast fillets - cubed
1onion - chopped
1/2 tsp curry powder
1tbls flour
1/2 water
2 chicken stock cubes
1 440g can corn kernels
2 apples
Salt and pepper
Method -
Cook chicken in butter until cooked - Place in casserole dish
Fry onion and add curry and flour and mix well
Stir in dissolved cubes in water and corn and liquid stir over heat until boils and thickens
add peeled and quartered apples and salt and pepper
pour over chicken and bake for an hour serve with rice or vegies
